 Orange Tea Cake

Teacakes originated in Britain and were served, as the name implies, with afternoon tea. Even though they're called cakes, tea cakes are old-fashioned cookies made with butter, sugar, eggs, flour, and vanilla.

Ingredients:
  •  Butter - 1 cup
  •  Sugar -1.5 cups
  •  Maida - 2 cups
  • Egg whites - 5
  • Orange - 1 (juice + zest) if small oranges, use three
  • Baking powder - 0.5 tsp
  • Baking soda - 0.25 tsp
  • Vanilla essence

Procedure:
  • Sieve maida with baking powder, baking soda & keep aside.
  • Butter the baking tin, and keep aside.
  • Preheat the oven to 160°c.
  • In a bowl take butter, egg whites and add sugar to it & beat it for 2min, then add the orange juice & mix well.
  • Then add orange zest, vanilla essence and mix it nicely, then add sieved maida mixture make a batter.
  • Pour the batter into a baking tin, then bake it in a preheated oven for 45min over 160°c. Coil should be on both sides & place the tin on the lower rack.
  • Check the cake once after 40min, by inserting a toothpick, if it comes out clean remove it from the oven & cool it for at least 3 hours before slicing it.
  • Enjoy with a cup of tea or coffee.
